Stuffed Portobello Mushrooms

These are CRAZY easy. And definitely look like a lot more work than it actually is. The whole thing took 20-25 mins start to finish. This would be perfect to add to a few pieces of toast, or used as a side to a dinner. I am not sure where this lies in the categories I have right now, so I am going to put it in breakfast and if I end up making a sides category I will throw it in there too. The key to this is finding the biggest portobello mushrooms possible, and making sure you get the top to be as flat as possible so it doesn't tip over and spill the egg.








Ingredients:

2 Portobello mushrooms

2 Eggs

Oil of choice (Chosen foods avocado oil)

Dill

Garlic Powder

Chili Powder

Red Pepper flakes

Optional but enjoyed: Pisqueya hot salsa


What to do:

Set oven to 400 degrees

Wash and dry portobellos (really dry them!!!)

Broil the mushrooms for 5 minutes (just enough to get them hot)

Re pat dry

Crack an egg in each of them, drizzle oil on top and layer with spices

Cook for 15 minutes or until whites are cooked
