Berry Cinnamon Rolls

I would TOTALLY not do this on a regular basis, because it is a bit tedious. However it is really fun and rewarding because it takes a little more effort than a normal breakfast. It doesn't require much ingredients and from start to finish, it took about 30 minutes. So if you are looking for something fun to do on a Sunday, highly recommend!

my jam of choice was blackcurrant from ENGLAND wahoo

What you'll need:

1 Cup Birch Benders Waffle/Pancake mix (or a crepe mix!)

2 Egg whites

1 TBS Cinnamon

Jam of choice

1. Take 1 cup of Birch Benders and mix with 3/4 cup of water, 1 TBS cinnamon and 2 egg whites.

*The key to these are a well greased pan, I find that spray oil works best. (If you are using a different mix, make accordingly.)

2. When the pan is hot, pour a bit of crepe mix and roll the pan around a bit to spread it out. It should be runny. (The first one always turns out terrible, so if it doesn't work don't be alarmed just try again.)

3. Cook until the edges lift and then flip.

*With the rolls you don't want the as crispy as a normal crepe. Just make sure the batter is cooked and transfer to a plate.

4. Layer the crepe with jam of choice and then roll the crepe up.

5. Cut into little "cinnamon buns" and then transfer to a dish that can withstand temperatures above 350 degrees. Repeat with the rest of the batter until your dish is full of little rolls.

6. Place the dish into an air fryer at 350 degrees for 10 minutes, keep an eye on it. You just want them to get crispy. (Could probably do the same with a normal oven? Haven't tried it- lmk if you do!)

7. Top with whatever you are feeling! I did some granola because this one is too good to pass up.
