Raspberry Honey Cacao Breakfast Muffins

I love LOVE sweet things in the morning. Personally I also hate scrolling for hours to find a recipe. So I'll keep this first post short and sweet. Let me know what you think :)


What you'll need:

1 cup of oats

1/2 cup coconut sugar

1/3 cup applesauce

1 egg

1/4 cup coconut flour

1/4 cup almond flour

2 heaped scoops of raw cacao powder

1 tbs soaked chia seeds

1/2 tsp baking soda

1 tsp baking powder

1 cup raspberries (I used frozen and melted in the microwave to fill 1 cup)


Mix the wet ingredients + chia seeds and oats and set aside for 5-10 mins. This allows the oats to soak and chia seeds to get gelatinous if they were not previously soaked.

Add the rest of the ingredients and stir till combined, do not overstir or they won’t rise as well. You WANT the fluff, trust me!

Cook at 400 degrees for 15-20 mins or until a toothpick comes out clean. Topped mine with a raspberry honey I found at world market, the brand is happy honey.
