Whole Wheat Zucchini Brownies

ZUCCHINI WHOLE WHEAT BROWNIES ARE HERE! So pumped with this recipe. I cannot wait to go home and make it for the fam!



THE SWIRL.


I had zucchinis that were going off. So I wanted to retry my brownie recipe but tweak it with these dudes. Using a high speed blender is ace for this!

Lets get to it!


What you'll need:

1/4 cup avocado oil (veg or coconut are great too)

1 can of black beans

1 TBS vanilla bean paste

3/4 cup sugar (choose a liquid one like honey, maple, date or agave)


1 cup whole wheat flour

1/2 cup cacao powder

2 small grated zucchinis (~1 cup)

1/2 tsp baking soda

1 cup chocolate chips

Shake of cinnamon

Shake of salt

2 packets of sunflower seed butter for topping


1. Throw the first 4 ingredients in a blender until mixed.

2. Grab a bowl and then hand mix the rest of the ingredients in.

3. Swirl sunflower seed butter on top. (ANY nut butter or seed butter will make this amazing)

4. Bake for 25 mins at 350 degrees and DIG IN.


PS I highly recommend freezing half of the batch so you can have access to them later! It is the best when you come home from school and can pop a few into the microwave. ENJOY!
